Carrot Almond Milk Juice

I broke down and bought a juicer this week.  A non fancy Breville power juicer that I got on Craigslist for $80.  I was tired of reading reviews and trying to figure out the perfect juicer and just bought one.  Guess what?  It’s perfect.  Easy to clean, yields a lot of juice, and doesn’t take up space.  I can drink as much juice as I want without feeling sick.  With the Vitamix, I had to stop making blended juices because all that fiber was too much for my weak digestive system to handle.

So, juicing to infuse the body with vitamins it is.  This juice, inspired by my favorite nutritionist, is an incredibly simple and delicious way to start the morning.  I made the lazy version.

Here’s the recipe:

  • 8 Carrots
  • Unsweetened Almond Milk

And the instructions:

Make the carrot juice.  It takes a lot of carrots to make a little bit of juice, so I used a bunch.

Depending on how much juice your carrots and juicer yield, add an equal amount of almond milk.  Making your own would be optimal, but this took less than 5 minutes.

I’m trying to stop drinking coffee, so this was an amazing way to start the morning and feel good about it!

Hi!! I'm Brigitte Theriault. I help women who are TIRED of feeling sick and unhealthy transform their relationship with food. My goal is to show you how to figure out what to eat, where to shop for healthy ingredients, and how to cook this stuff so you can feel ALIVE again. I want to help you realize that this is possible and within your reach, and not as hard or overwhelming as you think. I battled endometriosis, epstein-barr virus, chronic allergies and sinusitis. For years, pain, exhaustion, and frustration was a normal way of life. When the epstein-barr struck, I developed severe food allergies that forced me to re-evaluate my diet. As a chef, this was paradoxical. I could make healthy food taste good, but I could no longer eat the foods I once loved. I gave up bread, cheese, sugar, coffee, and wine. It was the hardest thing I have ever done in my whole life. But changing my relationship with food changed my life. I went back to school to study nutrition. I realized how disconnected I had been to real food my whole life. I became connected to my food sources. My allergies and exhaustion went away. I started to feel vibrant and healthy again. And I developed a passion for guiding you through your own path of making sense of your relationship with food.

  1. This sounds amazingly delicious. I have a non fancy juicer too. I have yet to use it in a few years because it intimidates me. Today is the day! :)

    • Yay! I hope it turns out amazing! It takes a little getting used to but once you get the hang of what veggies to buy and what tastes good together, it’s easy!
