This smoothie is the next best thing to eating pumpkin pie. It’s super healthy, and totally addictive. The coconut milk adds just enough creaminess, and the cinnamon just the right amount of spice. The dates add just the right amount of sweetness, but without the sugar. I literally can’t stop drinking it.
For the recipe:
Makes 2.
- 2/3 cup Pumpkin Puree, canned or fresh
- 1 cup Coconut Milk
- 1 cup Water
- 2 Dates
- 1/2 tsp. Cinnamon
And the instructions:
In a blender, place all of your ingredients, and blend for 20-30 seconds. You can also use an immersion blender, which makes the clean up a bit easier.
That’s it. It’s super easy! And absolutely delicious!
